Cooking with Wild Herbs

We begin with a walk through the garden of Villa Belvédère. Unhurried and attentive, we move slowly, observing and fully present with all our senses. There is no rush. We take the time to listen to the wild plants, to meet them with openness, and to allow a quiet relationship to unfold.

We then bring our gathered bounty back to the kitchen and begin its preparation under the attentive and experienced guidance of our instructor. With simple tools and familiar ingredients, we learn how to transform what we have found into nourishing dishes and refreshing infusions. The focus lies not on complexity, but on care, attentiveness, and the pleasure of working with our hands – allowing the character of each plant to shape the meal it becomes.

Finally, we sit down together to share what we have prepared. Time opens up as we eat, taste, and enjoy – not only the food, but the company of old and new acquaintances. Conversation flows easily, silences are welcome, and the meal becomes more than nourishment alone: a moment of connection, presence, and quiet celebration.
